Banana Pancakes

125 g Oats
2 Eggs
1 Banana (ideally not too ripe)
50-100 ml of any type of milk (more for larger, flatter pancakes)
1 tsp Rapeseed/Olive Oil per batch
- Toppings
Any Fruit
Nuts
Low Fat Yoghurt
A dash of honey
Directions
- Blend the oats, banana, and eggs together until a paste is formed.
- Add milk to preference (more milk will make a thinner mixture)
- Heat 1 tablespoon of oil in a pan
- Using a ladle, add 2-4 separate scoops of mixture to a pan
- Cook on each side for approximately 3 minutes or until the outside of the pancakes become golden brown and they are cooked through
- Repeat with the next batch until you have used all of the mixture
- Serve with a mixture of yoghurt, fruit and nuts to taste
