Corn on the Cob Ribs

BBQ ribs are getting a veggie twist with corn! these ribs are the ultimate corn side dish.

  • Corn
  • 2-4 large corn on the cobs

  • Spice Mix
  • 1 tsp cracked black pepper

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1 tsp dried oregano

  • 1 tsp smoked paprika

  • 1/2 tsp chilli powder

  • 1 tbsp extra virgin olive oil


  • Preheat the oven to 220 degrees Celsius.
  • Place a pan of boiling water over a high heat. Once the water is boiling, place the corn on the cobs in the water and cook for 10 minutes.
  • Drain, and leave to cool for 10 minutes.
  • Once cooled, carefully slice the corn on the cobs down the centre, lengthways, into quarters.
  • In a bowl, add the spices and mix thoroughly to incorporate
  • In a separate bowl, add the quartered ribs and the oil. Toss together. Once coated in oil, sprinkle over the spices and make sure to incorporate fully.
  • Place on a large baking tray and place in the oven for 20-25 minutes or until golden brown. Serve.
