
Healthy Chocolate Crispy Nests
A quick and easy recipe for healthier chocolate rice crispy nests, made with puffed brown rice. This is a really fun recipe to make with the kids for Easter or at any time of the year.

200 g dark chocolate (look for one without added sugar)
2 tablespoons maple syrup (or agave syrup)
2 tablespoons vegetable spread
75 g puffed brown rice (rice krispies can also be used although bear in mind that they contain added sugar)
50 g dried fruit eg raisins, cranberries, cherries
Directions
- Place 15 bun cake cases on a board or plate.
- Melt 200g dark chocolate.
- When the chocolate has almost melted add 2 tablespoons maple syrup and 2 tablespoons vegetable spread. Continue heating until combined. Try not to stir too much.
- Carefully remove from the heat and stir in 75g puffed rice and 50g dried fruit. Mix until everything is coated with chocolate.
- Spoon the mixture into the cake cases, pressing down with the back of a teaspoon.
- If you are making these into nests make a well in the centre and push the rice mixture to the sides.
- Allow to set in the fridge for 30 minutes
- Decorate with your chosen topping – we have used fresh fruit. Store in the fridge and enjoy!
