Lighter beef burgers with homemade sweet potato fries

usual recipe, accompanied by a cooling burger sauce to elevate the flavour.

500 g lean Beef mince
1 small red onion, finely chopped
2 tsp Cracked Black Pepper
1 tsp Paprika
2 tsp Cajun powder
1 tsp oregano
1 tsp garlic powder
2 1/2 tsp olive oil
- For toasting the burger bun
1 tsp olive oil
- For the assembling of the burger:
4 burger buns
1 large tomato, sliced
40 g baby leaf / rocket salad
125 g red cabbage, chopped
- For the burger sauce:
2 tsp paprika
2 tsp Cajun powder
1 tsp dried chives
8 tbsp 0% fat yoghurt
- For the fries:
4 sweet potatoes
1/2 tsp white pepper
1 tsp garlic powder
1 1/2 tbsp corn flour
1 tbsp olive oil
- For the garnish (optional):
2 tbsp parsley leaves, chopped
1 tsp dried chives
Directions
- Preheat the oven to 200 degrees Celsius.
- Organize all the equipment and ingredients needed for the recipe.
- Wash the outside of the potatoes to remove any excess dirt and cut them into very thin slices. Place them into a large bowl.
- Mix together the garlic powder, white pepper and cornflour in a small bowl. Add this to the potatoes and mix again. Next, add the olive oil to the potatoes and mix together until it is fully incorporated.
- Then lay the cut potatoes evenly on a lined baking tray and set aside for later.
- Chop the parsley, onion, tomato and red cabbage. Set all of this aside.
- Place the yoghurt, dried chives, paprika and Cajun powder in a bowl and mix until fully incorporated. Then, set this aside in the fridge.
- In a mixing bowl, add the beef mince, red onion, black pepper, garlic powder, paprika, Cajun powder, and oregano in a small bowl and mix this all together. Be careful not to overwork the burger mixture. Next, divide the burger mixture into four equal balls. Place them on a plate, then cover with cling film and refrigerate for 15 minutes. After 15 minutes, remove the beef mince balls from the fridge.
- Place the chopped potatoes in the oven for 10 minutes. After 10 minutes, turn the fries around using tongs and cook for a further 10 minutes or until they are golden in colour.
- 19 minutes into the total cooking time of the potatoes, place a large frying pan over medium-high heat. Flatten a beef patty on a plate using a spatula to approximately 1 inch thick. Repeat for the remaining patties and reshape them if needed.
- Then, add ¼ of the olive oil, spread this on the pan and transfer one of the flattened patties into the preheated frying pan. Cook on one side for 5 minutes. Then flip the burger over and cook the other side for 5 minutes. When there are 60 seconds left of cooking time for the patties, place a burger bun onto another pan, over medium-high heat with the oil. Next, evenly distribute the oil around the pan and toast the bun for 30 seconds. Then, remove the burger patty and burger bun halves from the pan. Repeat this step for the remaining burgers. If cooking multiple patties and buns at a time, add all of the oil instead, to both pans.
- Remove the fries from the oven. Immediately, add these to a bowl and mix in the ground black pepper, chopped parsley and dried chives.
- Place the fries on a serving platter or board. Assemble the burger with the pre-chilled burger sauce, beef patty, burger bun, rocket, tomato and red cabbage. Serve with fries and extra burger sauce. Repeat this when assembling the remaining burgers.

Notes
- Top Tips:
- – Ensure that the beef patties are compact when forming them, to prevent them from falling apart in the pan.
- – When making the fries, make sure to evenly distribute a single layer of the potatoes on the oven tray, to ensure even cooking times. Use an additional lined baking tray, if necessary.
- – Try to use a non-stick pan to avoid the patties from sticking.
- Serving suggestions:
- – Increase the fibre content further by including avocado inside or accompanied with the burger.
- – This recipe can be made dairy-free if dairy-free yoghurt is used for the burger sauce.
