
Hidden Veg Cheesy Pasta

1 large Yellow pepper
1 Courgette
2 Garlic cloves
Olive oil
400 g Wholewheat pasta/spaghetti
500 ml Milk of your choice
50 g Butter
4 tbsp Plain flour
100 g Cheddar cheese grated
Directions
- Wash, prepare and roughly chop the vegetables into 2cm pieces, thinly slice the garlic cloves
- Put the vegetables and garlic in a frying pan with a drizzle of olive oil & fry on medium heat until cooked and starting to brown.
- Use a food processor or hand blender to puree the vegetables and garlic
- Bring a pan of water to the boil and cook your pasta.
- Add the milk, butter and flour to a saucepan and heat on medium while whisking. Keep whisking until the butter melts, the flour dissolves and the mixture comes to the boil. Let it simmer for another minute while whisking, you should see the sauce thicken up.
- Remove from the heat, add your cheese and vegetable puree, and give everything a good stir-up. You’re ready to add your sauce to your pasta now and enjoy!
