Ingredients

  • 2 Wholemeal Sandwich Thins

  • 1 Medium Sweet Potato

  • 1 Red Pepper

  • 1 Yellow Pepper

  • Handful Spinach

  • 50 g Mozzarella

Directions

  • Peel, chop and boil the sweet potato in un-salted water until soft enough to mash or blend.
  • Mash/blend the sweet potato into a smooth puree.
  • Evenly spread the sweet potato paste onto the sandwich thins
  • Thinly slice the red and yellow peppers.
  • Thinly cut the mozzarella to fit the sandwich thin base.
  • Place the cut vegetables and mozzarella and place on to the sandwich thins.
  • Pop into the pre-heated oven for 8-10 mins.
  • Take it out of the oven and cool for a few minutes, enjoy!
