
Salmon Nuggets

4 fresh salmon fillets
2 eggs
100 g plain flour
100 g panko breadcrumbs
1 tsp dried mixed herbs
1/2 tsp garlic powder (optional but extra tasty!)
Directions
- Preheat your oven to 200 degrees and prepare your salmon by carefully removing the skin and chopping into bite-size chunks.
- Take 3 small bowls; crack and whisk the eggs in one, add the flour to the other and the breadcrumbs to the final one – adding the herbs and garlic powder (if you are using it) to the breadcrumbs.
- Take a salmon chunk and coat it in the flour, dip it in the egg and then roll in the breadcrumbs. Repeat this with each chunk of salmon.
- Grease or line a baking tray and carefully place the nuggets on. Bake in the oven at 200 degrees for 13-15 minutes until cooked through.
