Sunshine Salmon Tacos

Salmon is an oily fish which contains a type of polyunsaturated fat called omega 3. Aim to have two portions of fish a week, one of which should be an oily fish to promote good heart heath.

Ingredients

  • 160 g mixed colour cherry tomatoes

  • 1 x small ripe mango

  • 1/2 small ripe avocado

  • 2 x spring onions

  • 2 x 130g salmon boneless fillets, skin on

  • 2 heaped tsp Cajun seasoning

  • 4 x small tortillas 

  • 2 x limes

Directions

  • Cut cherry tomatoes into quarters.
  • Destone, peel and roughly chopped the mango. Scoop out the avocado and finely slice.
  • Trim and finely slice the spring onions. Sprinkle Cajun seasoning over the fillets.
  • Place the seasoned salmon fillets in the air fryer and cook at 200°C for 7-8 minutes or until cooked through.  
  • Sprinkle the mango, avocado and spring onions over the tortillas then flake over the cooked salmon.  
  • Squeeze the juice of 1 lime over the tomatoes then add to the tacos. Serve with a lime wedge for extra zing!
