Sweet Potato Pancakes

They’re rich a great source of fibre, which helps keep little tummies happy. You can also use sweet potato puree in porridge for some extra goodness – just stir it in while cooking for an extra boost of nutrition!

60 g sweet potato
250 ml milk of your choice
1 tsp vanilla extract
200 g oats
1 tsp baking powder
1 x egg (optional)
1 tsp butter
Directions
- First make the sweet potato puree, peel the sweet potato and cut it into 1-inch cubes. Either boil or steam for about 8 minutes until soft.
- Add all the ingredients apart from the butter to a food processor or strong blender and blend until the mixture is smooth. Set aside for 10 minutes to firm up.
- Lightly grease a frying pan with a little of the butter and spoon one tbsp of batter per pancake. Cook 2-3 minutes on one side then flip them over gently using a spatula and cook on the other side for 1 minute until the pancakes are fluffy and golden. Serve warm with a topping of your choice such as sliced strawberries
