
Veggie-Packed Tomato Sauce

1 large courgette
1 large carrot
1 yellow pepper
1 red pepper
1 large onion
3 garlic cloves
2 cans chopped tomatoes
1/2 tube of tomato puree
Olive oil
Directions
- Preheat the oven to 200 degrees.
- Wash, prepare and roughly chop all the vegetables, leave the garlic cloves whole.
- Put the vegetables and garlic in a large dish suitable for the oven and drizzle with a generous glug of olive oil, roast at 200 degrees for 20-30 minutes until everything is nicely browned and soft.
- Add the canned tomatoes and tomato puree and blend the sauce (a hand blender works great for this).
- If using for pasta, stir through cooked pasta, or spread it on top of a wholemeal pitta for a quick homemade pizza! Or simply serve it as it is with some crusty bread if serving it as a soup.
