A veggie-packed versatile tomato sauce that can be used in place of your usual one or any shop bought variety.

Ingredients

  • 1 large courgette

  • 1 large carrot

  • 1 yellow pepper

  • 1 red pepper

  • 1 large onion

  • 3 garlic cloves

  • 2 cans chopped tomatoes

  • 1/2 tube of tomato puree

  • Olive oil

Directions

  • Preheat the oven to 200 degrees.
  • Wash, prepare and roughly chop all the vegetables, leave the garlic cloves whole.
  • Put the vegetables and garlic in a large dish suitable for the oven and drizzle with a generous glug of olive oil, roast at 200 degrees for 20-30 minutes until everything is nicely browned and soft.
  • Add the canned tomatoes and tomato puree and blend the sauce (a hand blender works great for this).
  • If using for pasta, stir through cooked pasta, or spread it on top of a wholemeal pitta for a quick homemade pizza! Or simply serve it as it is with some crusty bread if serving it as a soup.
