African & Caribbean Cookbook 

A collection of traditional African and Caribbean recipes with a healthy twist!

Featuring favourite recipes such as Jollof Rice, Ackee & Salt Fish, Goat Curry and Peanut Butter Soup.

This cookbook was created by nutrition academics – Dr. Tanefa Apekey (University of Sheffield), Dr. Sally Moore (University of Leeds), and Prof. Maria Maynard (Leeds Beckett University) – in response to the lack of culturally relevant healthy eating resources for African and Caribbean communities.

In collaboration with local residents and community practitioners, they co-designed healthier versions of traditional African Caribbean dishes. The project aims to tackle health inequalities and diet-related conditions such as diabetes, heart disease, and poor mental health by promoting accessible, culturally sensitive nutrition guidance.

The work was supported by LeedsACT Seedcorn and Heart Research UK, with additional funding from the University of Sheffield’s Public Engagement Fund to support the cookbook’s design and outreach.
