This guacamole is made with lots of fresh ingredients and packed with flavour. It can be served in a variety of ways, as a dip for some homemade crisps, on top of a baked potato, on top of chilli, in fajitas, in tacos – you get the idea!

Ingredients

  • 3 x ripe avocados 

  • 1/2 small onion 

  • 2 x tomatoes

  • 1 x jalapeno pepper (omit if you don’t like spice) 

  • 2 x garlic cloves

  • 1 x lime 

  • 3 tbsp fresh coriander

Directions

  • First dice the onion, tomatoes (removing the seeds so they don’t make the guacamole watery) and jalapeno. 
  • Then, finely chop the coriander and mince the garlic. 
  • Cut and smash the avocados with the back of a fork. 
  • Add the juice of the lime to the avocado, add in all the other ingredients and mix well.
