Glorious Guacamole
Recipe by Amie LeckieThis guacamole is made with lots of fresh ingredients and packed with flavour. It can be served in a variety of ways, as a dip for some homemade crisps, on top of a baked potato, on top of chilli, in fajitas, in tacos – you get the idea!

3 x ripe avocados
1/2 small onion
2 x tomatoes
1 x jalapeno pepper (omit if you don’t like spice)
2 x garlic cloves
1 x lime
3 tbsp fresh coriander
Directions
- First dice the onion, tomatoes (removing the seeds so they don’t make the guacamole watery) and jalapeno.
- Then, finely chop the coriander and mince the garlic.
- Cut and smash the avocados with the back of a fork.
- Add the juice of the lime to the avocado, add in all the other ingredients and mix well.
