This vibrant, crunchy coleslaw is the perfect heart-healthy side for summer meals. Made with colourful cabbage and carrots, it's packed with fibre and antioxidants to support cholesterol and blood pressure. Using light mayo and a splash of vinegar keeps it creamy yet refreshing—without piling on the saturated fat or salt.


Method

  1. Prepare the cabbages by removing the core with a knife. Discard the core. On a chopping board, finely chop into small (but chunky) pieces. This can also be done in a food processor with the shredding attachment.
  2. Peel the carrots, then grate them. Mix these in with the cabbage in a bowl.
  3. Add the mayonnaise and vinegar to the bowl and mix well.
  4. Ready to serve! (Can be kept covered and chilled for up to 3 days)

  • 1⁄2 small white cabbage
  • 1⁄2 small purple cabbage
  • 4 carrots (peeled)
  • 125 g light mayonnaise
  • 1 tbsp white wine vinegar
  • Black pepper to season
