Greek Yogurt & Strawberry Parfaits

This vibrant parfait layers juicy strawberries with creamy Greek yogurt and hearty oats, making it a refreshing and wholesome treat perfect for your Wimbledon celebration. Enjoy as a heart healthy desert in the garden or as a fun breakfast!


Method

  1. Wash and slice the strawberries. In a small bowl, mix the yogurt with the vanilla extract.
  2. Layer the parfaits. In two small glasses or jars, spoon a layer of Greek yogurt into the bottom. Add a layer of strawberries, followed by a sprinkle of oats.
  3. Repeat the layers. Add another layer of yogurt, more strawberries, and finish with a final sprinkle of oats.
  4. Chill or serve immediately. You can serve them right away for a crunchy texture or refrigerate for 20–30 minutes or overnight to soften the oats.
  5. Top with a mint leaf and a few extra strawberry slices for that Wimbledon-worthy presentation.

  • 4 fresh strawberries
  • 250g plain 0% fat Greek yogurt
  • 50g rolled oats/porridge oats
  • ½ tsp vanilla extract
  • Fresh mint leaves (for garnish, optional)
