This fresh and flavourful Indian salad is the perfect side for curry night. Packed with herbs, spices, and crunchy peanuts, it adds fibre, vitamins, and minerals to your meal—no need for extra salt. Coriander adds a heart-healthy boost, thanks to its natural diuretic effect that can support healthy blood pressure. Ready in minutes, it’s a simple way to brighten up your plate.


Method

  1. Dice the onion, cucumber and tomatoes into small chunks (no larger than 1cm cubes) and finely chop the green chilli and coriander.
  2. Juice the lime and combine with the black pepper, cumin and chilli powder.
  3. Mix everything together in a bowl and serve.

  • 1 x red onion
  • 1 x medium cucumber
  • 2 x large tomatoes
  • 1 x green chilli (optional)
  • 1⁄4 cup unsalted roasted peanuts
  • 1 handful fresh coriander
  • 1⁄2 x lime
  • 1⁄4 tsp ground black pepper
  • 1⁄4 tsp ground cumin
  • 1⁄4 tsp chilli powder
