This vibrant pizza is a fun and nutritious way to satisfy your pizza cravings! Topped with sweet potato, red and yellow peppers, and a handful of spinach, it's packed with heart-healthy veggies. Using wholemeal sandwich thins as the base gives an extra boost of fibre to keep you feeling full and support heart health.


Method

  1. Peel, chop and boil the sweet potato in un-salted water until soft enough to mash or blend.
  2. Mash/blend the sweet potato into a smooth puree.
  3. Evenly spread the sweet potato paste onto the sandwich thins
  4. Thinly slice the red and yellow peppers.
  5. Thinly cut the mozzarella to fit the sandwich thin base.
  6. Place the cut vegetables and mozzarella and place on to the sandwich thins.
  7. Pop into the pre-heated oven for 8-10 mins.
  8. Take it out of the oven and cool for a few minutes, enjoy!

  • 1 Medium Sweet Potato
  • 1 Red Pepper
  • 1 Yellow Pepper
  • Handful Spinach
  • 50 g Mozzarella
