Strawberry and Rhubarb Yoghurt Lollipops

These fruity frozen treats are packed with fibre, vitamins, and a sneaky veggie boost—making them a heart-smart choice for summer snacks.


Method

  1. Steam your strawberries, rhubarb & carrot for 10 minutes (if you have a child who is particularly fussy with texture, steam the carrots for an additional 5 minutes to make sure they’re soft enough to blend into a smooth paste).
  2. Use a blender to puree the steamed strawberries, rhubarb & carrot.
  3. Layer your puree in your moulds with the yoghurt to create a swirling effect.
  4. Freeze until solid, ideally overnight.

  • 1 cup Strawberries
  • 1⁄2 cup Rhubarb, chopped
  • 1⁄4 cup Carrot, peeled & chopped
  • 200 g full-fat natural yoghurt (or coconut yoghurt)
