Veggie Wraps with Feta Cheese

Ingredients

  • 1 x portobella mushroom cap, sliced

  • 1 x small red bell pepper (or half a large pepper) sliced

  • 100 g green beans

  • 1 tbsp olive oil

  • 400 g can chickpeas, drained

  • 1 tbsp lemon juice

  • pepper to season

  • 2 wholegrain wraps

  • 30 g feta cheese, crumbled

Directions

  • Put the sliced mushroom, red pepper and green beans in a bowl add ½ tbsp of olive oil, and mix
  • Heat air fryer to 400°F/ 200°C air fry the vegetables, shaking occasionally until tender, 8-10 minutes.
  • Meanwhile, mash chickpeas with lemon juice, ½ tbsp oil, season with pepper and spread on wraps. 
  • Divide veggies and feta cheese and wraps and roll up.
