
Veggie Wraps with Feta Cheese
Chickpeas and wholegrain wraps are good sources of fibre. Eating more fibre is associated with a reduced risk of cardiovascular disease

1 x portobella mushroom cap, sliced
1 x small red bell pepper (or half a large pepper) sliced
100 g green beans
1 tbsp olive oil
400 g can chickpeas, drained
1 tbsp lemon juice
pepper to season
2 wholegrain wraps
30 g feta cheese, crumbled
Directions
- Put the sliced mushroom, red pepper and green beans in a bowl add ½ tbsp of olive oil, and mix
- Heat air fryer to 400°F/ 200°C air fry the vegetables, shaking occasionally until tender, 8-10 minutes.
- Meanwhile, mash chickpeas with lemon juice, ½ tbsp oil, season with pepper and spread on wraps.
- Divide veggies and feta cheese and wraps and roll up.
