Heart healthy creamy styled pasta, great for lunch or dinner.

Ingredients

  • 1 tbsp olive oil 

  • 1 large chicken breast 

  • 150 g wholewheat pasta

  • 1/2 red onion

  • 1/2 yellow pepper

  • 1/2 red chilli

  • 1 tbsp tomato puree 

  • 3 tbsp reduced fat crème fraiche  

  • 1/2 tsp paprika 

  • 1/4 tsp cumin

  • Handful of chopped fresh parsley

  • Slice the chicken into strips. 
  • On a separate chopping board, cut the red onion and peppers into strips. Then finely dice the chilli.  
  • In a bowl, mix the tomato puree with the crème fraiche and put to the side for later. 
  • Boil the kettle ready for the pasta.  
  • Heat the oil in a frying pan on the hob. 
  • Once the oil is hot, add the chicken and cook until golden all over. Remove and set aside for later.  
  • Add the pasta and boiling water to a pan, cook until soft. Reserve 50ml pasta water. 
  • Add the peppers and red onion to the frying pan, stirring occasionally. Once soft add the chicken back in along with the diced red chilli. Cook for 2 minutes, then add the paprika and cumin to cook for 1 minute until aromatic
  • Stir in the tomato puree and crème fraiche mixture, as well as the cooked pasta. Cook until hot. Add the reserved pasta water if the sauce is not to your desired consistency.
  • Finally, stir in a handful of fresh parsley and enjoy!
