
Falafel inspired Chickpea and Veggie Burgers

2 tbsp olive oil
1 medium sized onion, roughly chopped
3 cloves garlic, finely minced
1 tsp ground cumin
2 tsp fresh coriander, finely chopped
400 g tin of chickpeas; drained, rinsed and excess skins removed
50 g hummus or harissa hummus
1 tsp black pepper
50 g plain flour
50 g cashews or pine nuts
Directions
- Heat 1 tsp of the oil in a large frying pan over medium-high heat. Add the onion, garlic, cumin, and coriander for 4-5 minutes until fragrant and lightly brown. Make sure this is constantly stirred to prevent over-browning.
- Place on the side to cool for several minutes. Preheat the oven to 200 degrees Celsius.
- In a food processor, place 200g of the chickpeas, the [harissa] hummus, pepper, and flour and blend to a rough paste – you want this the same texture as chunky peanut butter.
- Then add the remaining chickpeas and pine nuts or cashews, as well as the onion-spice mixtures, and pulse for a few seconds until the chickpeas and nuts have broken down but are still chunky and retain some texture.
- Divide the mixture into 8 balls. Place each ball onto a baking tray and flatten each ball and shape it into a normal burger shape, around 2 inches thick.
- Bake in the oven for 15-20 minutes until golden on the outside and cooked through.
- Serve in a wholemeal burger bun with salad and homemade wedges.
