A delicious and simple fish curry, a healthier alternative to your usual takeaway.

Ingredients

  • 400 grams fresh cod (can use frozen but defrost beforehand)

  • 250 grams cherry tomatoes

  • 100 grams green beans

  • 1 x medium onion 

  • 1 x red chilli

  • 3 cm chunk fresh ginger

  • 4 x garlic cloves

  • 1 tbsp lemongrass paste

  • 1 tbsp olive oil

  • 1 tsp turmeric

  • 1 tbsp curry powder

  • 1 handful fresh coriander

  • 400 ml can of light coconut milk

  • 200 ml low salt vegetable stock

Directions

  • First prepare all your ingredients – trim and half the green beans, dice the onion, chop the chilli, peel and grate the ginger and garlic. 
  • Heat a large saucepan over a medium heat with the olive oil and cook the onion, chilli and ginger for about 5 minutes. 
  • Add the garlic and tomatoes and cook for a further 2 minutes before adding the turmeric and curry powder and cooking for 2 minutes more. 
  • Next add the lemongrass paste and stock, bring to the boil and cook for 5 minutes.
  • Stir in the coconut milk and green beans and lay the cod into the curry, bring back to the boil and cook for about 10 minutes until the fish is fully cooked and breaks apart easily. 
  • Serve topped with coriander and your favourite side.
