This simple, flavour-packed curry is a healthier alternative to your usual takeaway. Made with lean cod for a protein and iodine boost, it also features coriander to support healthy blood pressure and lemongrass, rich in anti-inflammatory quercetin, for added heart health benefits. A delicious way to care for your heart while enjoying a cosy curry night.

Method

  1. First prepare all your ingredients – trim and half the green beans, dice the onion, chop the chilli, peel and grate the ginger and garlic.
  2. Heat a large saucepan over a medium heat with the olive oil and cook the onion, chilli and ginger for about 5 minutes.
  3. Add the garlic and tomatoes and cook for a further 2 minutes before adding the turmeric and curry powder and cooking for 2 minutes more.
  4. Next add the lemongrass paste and stock, bring to the boil and cook for 5 minutes.
  5. Stir in the coconut milk and green beans and lay the cod into the curry, bring back to the boil and cook for about 10 minutes until the fish is fully cooked and breaks apart easily.
  6. Serve topped with coriander and your favourite side.
