This hearty Turkey Bake is a wholesome, batch-cook-friendly dish packed with lean protein and vibrant veggies. It’s perfect for busy weeknights as it can be easily reheated in the microwave and comes in at about £1.40 per portion making it a healthy but budget friendly option.

Big Batch Turkey Bake

Method

  1. Preheat the oven to 180°C. Grate the courgette, dice the onion and pepper and mince the garlic.
  2. In a large heavy bottomed pan, heat 1 tsp olive oil. Sauté the onion for 2 minutes then add the garlic, courgette, pepper and turkey mince and cook for a further 10 minutes or until the meat is cooked.
  3. Bring a pan of water to the boil and cook your pasta to al dente.
  4. To the pan with the veggies and turkey in, stir in the tomato passata, oregano and black pepper. Drain and rinse the lentils and add them to the pan. Let simmer for 5–7 minutes.
  5. Add the drained pasta and mix everything up before adding to an oven proof baking dish.
  6. Sprinkle with the cheese and breadcrumbs and bake for about 20 minutes. Enjoy!

  • 250g turkey breast mince (2% fat)
  • 400g tin of green lentils
  • 200g pasta of choice
  • 500g tomato passata
  • 1 courgette
  • 1 onion
  • 1 yellow pepper
  • 2 garlic cloves
  • 1 tsp olive oil
  • 1 tsp dried oregano
  • ½ tsp black pepper
  • 40g reduced fat cheddar cheese
  • 1 tbsp breadcrumbs
