Choc Chip Baked Oats

Sometimes only a sweet breakfast will do. These rich, chocolatey baked oats satisfy those cravings while packing in 12g of protein from ingredients like cottage cheese and eggs to help keep you fuller for longer and energised through the morning. Perfect served warm for breakfast, or enjoyed later as a healthier dessert.


Method

  1. Preheat the oven to 180°C. Line a small baking dish with greaseproof paper, about 18cm x 18cm.
  2. In a large bowl, mash the cottage cheese slightly with a fork. Beat in the eggs, honey, and vanilla until smooth.
  3. In another bowl, mix the oats, baking powder, cinnamon, salt and cocoa powder. Fold the dry ingredients into the wet mixture until just combined, then gently fold in the chocolate chips.
  4. Pour the batter into the prepared dish and smooth the top. Bake for 25–30 minutes, or until just set in the centre.
  5. Allow to cool slightly before cutting into 4 portions, top with fresh raspberries and enjoy.

  • 200g fat-free cottage cheese
  • 2 large eggs, beaten
  • 2 tbsp honey
  • ½ tsp vanilla extract
  • 80g porridge oats
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp salt
  • 2 tbsp cocoa powder
  • 1 tbsp dark chocolate chips
  • Handful raspberries
