Greek Yoghurt Cinnamon Rolls

Cinnamon rolls are a Norwegian classic, but traditional versions are high fat and sugar, making them more suited as a rare treat than a regular occurrence. Made with Greek yoghurt and a quick, no-yeast dough, these greek yoghurt cinnamon rolls are a much light version, they’re soft, fluffy, and ready in under an hour. A modest swirl of cinnamon and brown sugar makes them perfectly sweet whilst keeping the sugar content moderate – these are a version you can enjoy more often!


Method

  1. Preheat oven to 180°C. Line a baking tray with greaseproof paper.
  2. In a large bowl, combine flour, baking powder, bicarbonate of soda, salt, and caster sugar. In a separate bowl, whisk the egg with the Greek yoghurt. Mix wet into dry until a soft dough forms.
  3. On a lightly floured surface, roll dough into a rectangle, approx. 25x20cm.
  4. Spread melted butter over the dough, then sprinkle evenly with cinnamon and brown sugar.
  5. Roll the dough tightly from the long edge, then cut into 8 equal rolls. Place rolls on the baking tray, cut-side up.
  6. Bake for 20–25 minutes, until golden brown and cooked through.
  7. Mix cream cheese and honey with 1 tbsp of water to thin, then drizzle it over warm rolls.

  • 250g plain flour
  • 1 tsp baking powder
  • ½ tsp bicarbonate of soda
  • ½ tsp salt
  • 2 tbsp caster sugar
  • 1 egg
  • 150g 5% Greek yoghurt
  • 1 tbsp unsalted butter, melted
  • 2 tbsp light brown sugar
  • 1 tbsp cinnamon
  • 50g low fat cream cheese
  • 1 tsp honey or maple syrup
