Mediterranean Chicken Bowls

This quick and delicious Mediterranean-inspired chicken bowl is packed with lean protein and fresh veggies. With aromatic oregano, smoked paprika, and a burst of lemon, it’s a flavourful and heart-healthy meal. Serve with couscous and a sprinkle of feta for a balanced, satisfying dish. Add extra veggies to increase fibre and reach your 5-a-day!


Method

  1. In a large bowl, toss chicken pieces with oil, oregano, smoked paprika. Add tomatoes and onion and toss to combine.
  2. Add to air fryer basket and air fry at 200°C shaking the basket occasionally, until the chicken is golden brown and cooked through 15-16 minutes
  3. Meanwhile, toss couscous with lemon zest and prepare as per directions on package.
  4. Fluff with fork and add the lemon juice
  5. Serve chicken over couscous spoon any juices collected in the air fryer over the top. Sprinkle with feta and serve with lemon wedges.

    Ingredients

  • 2 x boneless and skinless chicken breasts cut into 1 ½ ins pieces.
  • 1⁄2 tbsp tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 120 g cherry tomatoes (approx. 12)
  • 1 x small onion roughly chopped
  • 2 x individual packets of couscous
  • 1 tsp grated lemon zest plus 1 tbsp lemon juice plus lemon wedges for serving
  • Crumbled feta, for serving
