These Bangers & Beans are made in the slow cooker for maximum flavour and minimal effort – perfect for warming up after a chilly evening outdoors or enjoying as a hearty weeknight meal. Packed with lean chicken sausages, fibre-rich beans, and a medley of wholesome vegetables, this dish is low in fat, low in salt, and contains no added sugar – making it a heart-healthy choice the whole family can enjoy. Whether you’re gathering around a bonfire or snuggling in on a cold evening, this recipe brings warmth and goodness to your bowl.

Slow cooker bangers and beans

Method

  1. Heat the olive oil in a non-stick pan, lightly brown the chicken sausages for 4–5 minutes.
  2. Prepare all the veggies as per the ingredient list and add them along with the beans, tomatoes, tomato purée, stock, vinegar, and spices to the slow cooker. Stir well to combine.
  3. Nestle the chicken sausages into the bean and veggie mix and cook on high for 3-4 hours or low for 6-8 hours.
  4. Serve with steamed green beans or a side of vegetables of your choice or dollop over a baked sweet potato.

    Ingredients

  • 6 lean chicken sausages
  • ½ tsp olive oil
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, sliced
  • 1 red pepper, chopped
  • 2 cloves garlic, minced
  • 1 tin (400g) cannellini beans, drained & rinsed
  • 1 tin (400g) butter beans or haricot beans, drained & rinsed
  • 1 tin (400g) chopped tomatoes
  • 1 tbsp tomato purée
  • 300ml low-salt vegetable stock
  • 1 tsp apple cider vinegar
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • ½ tsp ground black pepper
  • ¼ tsp chilli flakes (optional, for a kick)
  • 1 tsp Dijon mustard
