Teriyaki Salmon Protein Bowl

This salmon and brown rice bowl is a balanced meal packing in both flavour and 34g of protein. Salmon provides heart-healthy omega-3 fats, while brown rice adds fibre and minerals. Steamed broccoli, cabbage and edamame bring colour, texture and extra plant protein. A light teriyaki glaze adds sweetness and savoury flavour without needing heavy sauces.


Method

  1. Preheat the oven to 180°C.
  2. Cook the brown rice according to package instructions.
  3. Season the salmon with garlic, black pepper and chilli flakes. Bake for about 15 minutes until cooked through.
  4. Steam broccoli and edamame until tender.
  5. Remove the skin and roughly flake the salmon. Then assemble the bowls, diving everything equally.
  6. Drizzle with teriyaki sauce and sprinkle with spring onions and sesame seeds.

  • 150g brown rice
  • 2 salmon fillets
  • 1 tsp garlic powder
  • ¼ tsp black pepper
  • 1 tsp chilli flakes (optional)
  • 100g broccoli florets
  • 100g frozen edamame
  • 100g red cabbage, finely sliced
  • 2 tbsp light teriyaki sauce
  • 1 spring onion, sliced
  • 1 tsp sesame seeds
