These Heart-Healthy Pasta Salad Skewers are a fun, colourful twist on classic pasta salad – perfect for summer lunches, parties, or picnics. Made with wholewheat pasta, lean chicken, fresh vegetables, and reduced-fat mozzarella, they’re packed with flavour and heart-smart nutrition. Served on skewers for easy portion control, they make healthy eating simple and satisfying.

Pasta Salad Skewers

Method

  1. Cook pasta according to package instructions until al dente. Drain, rinse under cold water, and toss with a splash of olive oil to prevent sticking.
  2. Chop the veggies and chicken into chunks – not too small or they will split when you thread them onto the skewers.
  3. In a small bowl, whisk together the olive oil, lemon juice, mixed herbs and a pinch of pepper.
  4. Put the cooked pasta, mozzarella, chicken and veggies in a large bowl. Drizzle with the dressing and toss lightly.
  5. Thread ingredients onto skewers, alternating pasta, vegetables, meat, basil, and cheese for a colourful mix. Serve right away of chill ahead of time.

    Ingredients

  • 1 cup wholewheat pasta (e.g., fusilli or penne)
  • 2 cooked chicken breasts
  • 10 reduced-fat mini mozzarella balls
  • 1 red pepper
  • 1 yellow pepper
  • 10 cherry tomatoes
  • ½ cucumber
  • Fresh basil leaves
  • 1 tbsp extra virgin olive oil
  • 1 tsp lemon juice
  • 1 tsp mixed dried herbs
  • Pinch ground black pepper
  • 10 wooden or reusable skewers
