Pumped-Up Beans on Toast

This easy, budget-friendly twist on beans on toast adds colour, crunch and extra nutrition without much effort. By adding in fresh veg and using wholemeal sourdough, you’ll pack in more fibre and vitamins. It’s a quick healthy go-to meal, no fancy ingredients or cooking skills required, and it comes in at about £1.25 per portion!

Pumped-up beans on toast

Method

  1. First finely dice the pepper, grate the carrot and finely chop the chives.
  2. In a small pan, gently heat the baked beans and carrot together over medium heat. Add a pinch of smoked paprika and black pepper.
  3. Toast the sourdough slice and grate the cheese.
  4. Spoon the pumped-up bean mixture over the toast and top with the cheese.
  5. Sprinkle over the diced pepper and chopped chives and enjoy.

  • 1 slice wholemeal sourdough
  • ½ tin (200g) reduced salt & sugar baked beans
  • ½ red pepper
  • ½ carrot
  • Pinch of black pepper
  • Pinch of smoked paprika
  • 20g reduced fat cheddar cheese
  • 1 tsp chopped chives
