Roasted curried cauliflower

This quick and easy side dish is bursting with flavour and heart-healthy benefits. Cauliflower is rich in fibre and sulforaphane, a compound linked to healthy cholesterol and blood pressure levels. Using curry powder keeps the salt low while adding bold, warming flavour—perfect alongside your favourite curry.


Method

  1. Preheat the oven to 200°C and line a baking tray with grease proof paper or a reusable non-stick mat.
  2. Chop the cauliflower florets into bite-sized pieces and put it into a large mixing bowl.
  3. Add the curry powder and black pepper and toss to coat the florets.
  4. Add the olive oil and mix well, making sure every floret is coated with oil and spices – it’s easier to use your hands for this step.
  5. Distribute the cauliflower on the baking tray and cook for 25 minutes turning halfway through. Serve with your favourite curry!

  • 1 tbsp medium curry powder
  • 1⁄2 tsp ground black pepper
  • 2 tbsp olive oil
