This Roasted Red Pepper Dip is a delicious, high-fibre, heart-healthy option packed with nutrient-rich ingredients. Red pepper and white beans provide antioxidants and fibre, while extra virgin olive oil adds heart-protective monounsaturated fats. Blended with garlic, lemon juice, and smoked paprika, it’s a flavourful and wholesome dip perfect for spreading or snacking.

Roasted Red Pepper Dip

Method

  1. Roast the red pepper - slice in half, remove seeds, and place cut side down on a baking sheet. Roast at 200°C for 20 minutes, until the skin blisters and blackens. Let cool, then peel off the skin.
  2. Mince the garlic and juice the lemon.
  3. Combine all ingredients in a small food processor and blend until smooth. Add a splash of water if needed to reach desired texture.
  4. Serve chilled or room temperature with fresh veggies like cucumber slices, celery sticks, or raw cauliflower.

  • 1 garlic clove
  • 1-2 tsp lemon juice
  • ½ cup cooked white beans (like cannellini or navy)
  • 1 tsp extra virgin olive oil
  • ¼ tsp smoked paprika
  • Black pepper, to taste
