Sweet Potato Pancakes

This easy sweet potato pancake recipe creates soft, delicious pancakes that kids will love! Packed with nutrients, sweet potatoes are a great way to sneak in some hidden veggies. They’re rich a great source of fibre, which helps keep little tummies happy. You can also use sweet potato puree in porridge for some extra goodness - just stir it in while cooking for an extra boost of nutrition!


Method

  1. First make the sweet potato puree, peel the sweet potato and cut it into 1-inch cubes. Either boil or steam for about 8 minutes until soft.
  2. Add all the ingredients apart from the butter to a food processor or strong blender and blend until the mixture is smooth. Set aside for 10 minutes to firm up.
  3. Lightly grease a frying pan with a little of the butter and spoon one tbsp of batter per pancake. Cook 2-3 minutes on one side then flip them over gently using a spatula and cook on the other side for 1 minute until the pancakes are fluffy and golden. Serve warm with a topping of your choice such as sliced strawberries

  • 250 ml milk of your choice
  • 1 tsp vanilla extract
  • 200g oats
  • 1 tsp baking powder
  • 1 x egg (optional)
  • 1 tsp butter
