1 tsp rapeseed oil
1 onion, diced
500 g passata
1 tsp paprika
1 tbsp tomato puree
400 g mixed beans, drained
100 ml reduced salt vegetable stock
2 tsp dried mixed herbs
Directions
- Heat the oil in the pan. Once hot, add in the onion and cook until soft.
- Add the paprika and stir.
- Then add the tomato paste, passata, mixed beans, mixed herbs and vegetable stock. Simmer for 10-15 minutes or until thickened
- Serve with wholemeal toast or a baked sweet potato and enjoy!
