Cheese & Onion bake (Air Fryer)

This recipe is a healthier version of a takeout pastie. Packing in more fibre and less fat and salt, it’s a great comforting lunch option that will save you some calories and budget. Serve with a side salad for some extra nutrients and more fibre! You can easily make these vegan by swapping the cheese for a dairy free version or simply make them without cheese.


Method

  1. Pierce the potatoes a few times with a fork and cook them covered in the microwave for about 10 minutes, turning them over halfway through.
  2. While the potatoes cook, chop the onion, grate the cheese and beat the egg.
  3. Once cooked, use a fork to mash the potatoes, leave the skin on as this contains additional fibre. You might need to use a knife to chop the skin into small pieces. Add the mashed potatoes to a bowl along with the onion, cheese and pepper. Mix everything together well.
  4. Take a wrap and spread half of the potato mixture over half of the wrap, leave a small gap around the edge to seal. Do the same with the other wrap.
  5. Brush around the edges and over the exposed side of the wrap with the beaten egg, fold the wrap over and use a fork to crimp the edges.
  6. Brush the top side of the wrap parcels with beaten egg and cook in the air fryer on max crisp setting (if your model has it) or 240°C for 3 minutes. Flip the pastie over and brush the other side with beaten egg before cooking for a further 3 minutes. Serve with a side salad and enjoy.

  • 2 x small potatoes or one medium
  • 2 x wholewheat wraps
  • 1⁄2 onion, finely chopped
  • 30 g low fat cheddar cheese, grated
  • 1⁄4 ground black pepper
  • 1 x egg, beaten
  • Salad to serve
