This dip is high in protein and fibre and is a tasty way to add more veggies to your diet. Made with tender edamame, fresh lemon juice, and a touch of garlic, it’s smooth and flavourful. Pair it with raw veggies or whole grain crackers for a satisfying snack that supports heart health.

Creamy Edamame Dip

Method

  1. Steam or boil edamame for about 4-5 minutes, add a few minutes if using frozen. Drain and cool slightly.
  2. Add all the ingredients to a food processor and blend until smooth.
  3. Serve with your favourite raw veggies such as cucumber or carrot.

  • 1 cup shelled edamame beans
  • 1 tsp olive oil
  • 2 tsp lemon juice
  • 1 garlic clove, minced
  • 2 tbsp water
  • 1 tbsp fresh parsley, chopped
  • Pinch of cumin
  • Pinch of black pepper
