Corn on the Cob Ribs

BBQ ribs get a veggie twist with these flavour-packed corn ribs—an irresistible, heart-healthier side that’s perfect for summer grilling. Brushed with extra virgin olive oil and coated in a bold spice mix, they’re naturally low in saturated fat and full of flavour without the need for added salt.


Method

  1. Preheat the oven to 220 degrees Celsius.
  2. Place a pan of boiling water over a high heat. Once the water is boiling, place the corn on the cobs in the water and cook for 10 minutes.
  3. Drain, and leave to cool for 10 minutes.
  4. Once cooled, carefully slice the corn on the cobs down the centre, lengthways, into quarters.
  5. In a bowl, add the spices and mix thoroughly to incorporate
  6. In a separate bowl, add the quartered ribs and the oil. Toss together. Once coated in oil, sprinkle over the spices and make sure to incorporate fully.
  7. Place on a large baking tray and place in the oven for 20-25 minutes or until golden brown. Serve.

    Ingredients

  • 2-4 large corn on the cobs
  • 1 tsp cracked black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 1⁄2 tsp chilli powder
  • 1 tbsp extra virgin olive oil
