Fruit & Herb ice cubes

These ice cubes are a great way to add something special to your non-alcoholic drinks. The sky is the limit with flavour combinations and they are great to make ahead of time when entertaining or simply for you to enjoy with soda water instead of your usual alcoholic drink.


Method

  1. Wash and chop the fruit, keeping each one separate. Wash the herb sprigs and chop into about 1 inch length or as big as your ice cube tray will accommodate.
  2. Add your flavour combinations (here we are using melon and mint, strawberry and rosemary, peach and basil or lemon and ginger) to the ice cube trays and top with water. Its better to use filtered water or boiled and cooled water as this can yield clearer ice cubes which look nicer.
  3. Freeze for at least 8 hours and serve with still or sparkling water.

    Ingredients

  • 1⁄4 cup chopped melon of your choice
  • 1⁄4 cup chopped strawberries
  • 1⁄4 cup chopped peach
  • 1⁄4 cup chopped lemon including skin
  • A few sprigs of fresh mint
  • A few sprigs of fresh rosemary
  • A few sprigs of fresh basil
  • A thumb sized piece of fresh ginger, chopped
  • Soda water, to serve
