Give this famous little Disney rat a run for his money with this delicious ratatouille. A dish that can be the main event, topped with some mascarpone cheese or served as a side. It makes getting your veggies in easy!


Method

  1. Preheat the oven to 190°C and grab a 10-inch round or square oven dish.
  2. Dice the onion and mince the garlic.
  3. Very thinly slice the other vegetables using a knife, mandoline or in food processor with a slicing function.
  4. Roughly spread the tomato puree on the bottom of the oven dish, add the chopped onions, minced garlic, 1 tbsp of olive oil, 175ml water and mix well. Season with pepper to taste.
  5. Arrange alternating slices of the vegetables, starting at the edge of the dish and working inwards.
  6. Drizzle the vegetables with the remaining 3 tbsp of olive oil, more pepper if desired and sprinkle over the fresh thyme.
  7. Cover with baking paper and cook for 45 minutes.
  8. Serve with a dollop of low-fat mascarpone cheese if desired.

    Ingredients

  • 200 g tube of tomato puree
  • 1 x small onion
  • 15 garlic cloves
  • 4 tbsp olive oil
  • 1 Black pepper
  • 1 x aubergine
  • 1 x yellow squash or yellow courgette (swap for another green courgette if you can’t find either)
  • 1 x red pepper
  • 1 x yellow pepper
  • 1 tsp fresh thyme
