Chicken and Veg Pizza

Prep time: 10 minutes Cooking time: 20 minutes Total Time: 30 minutes

Fibre source, High protein, Low saturated fat, Low sugar

A heart-healthier take on takeaway pizza, this easy homemade version is made with just yoghurt and wholemeal flour for the base—boosting fibre and protein while keeping saturated fat and salt low. Topped with lean chicken and veg, it’s a tasty, filling meal that supports healthy cholesterol and blood pressure.

Method

  1. Pre-heat the oven to 200 degrees.
  2. In a bowl, mix the Greek yoghurt and flour to form a dough. Then roll out half of the dough on a floured counter until thin and repeat with the other half.
  3. Add the pizza bases to the oven about 7 minutes or until starting to brown. Then remove from the oven and put your toppings on. Here we use passata, chicken, cherry tomatoes, yellow pepper, red onion, and mozzarella.
  4. Cook in the oven for 10 minutes, until the base is crisp, and the cheese has melted. Enjoy.

    Ingredients

  • 1 cup fat free Greek yoghurt
  • 2 cup wholemeal self-raising flour
  • 100 ml Passata
  • 1 Cooked chicken breast, diced
  • 1 handful cherry tomatoes, sliced
  • 1⁄2 Yellow pepper, sliced
  • 1⁄2 Red onion, sliced
  • 125 g reduced fat mozzarella, sliced
