Tuna salad sandwich

This light and flavourful tuna salad sandwich filler is the perfect twist on a classic favourite. By swapping out mayonnaise for creamy low-fat Greek yogurt, it keeps the texture smooth and the calories in check, without sacrificing any taste. It also works great on top of a salad!


Method

  1. Add the yoghurt, mustard, lemon juice, black pepper and parsley to a bowl and whisk together.
  2. Finely chop the spring onions, red pepper and parsley and add them along with the tuna to the dressing and give everything a good mix up.
  3. Divide the mixture between the bread and serve or store in the fridge for a later date

    Ingredients

  • 100 g fat-free Greek yoghurt
  • 1 tsp Dijon mustard
  • 2 tbsp fresh lemon juice
  • 1⁄4 tsp black pepper
  • 1 tbsp fresh, chopped parsley1
  • 2 tins of tuna (choose in water rather than oil)
  • 2 x spring onions
  • 1⁄2 red pepper
  • 4 x slices wholemeal bread
