This classic Indian salad is the perfect side dish for your favourite curry. This recipe comes together in minutes and is loaded with fresh ingredients – a great way to add some extra fibre to your curry nights!

Ingredients

  • 1 x red onion

  • 1 x medium cucumber

  • 2 x large tomatoes

  • 1 x green chilli (optional)

  • 1/4 cup unsalted roasted peanuts

  • 1 handful fresh coriander

  • 1/2 x lime

  • 1/4 tsp ground black pepper

  • 1/4 tsp ground cumin 

  • 1/4 tsp chilli powder 

Directions

  • Dice the onion, cucumber and tomatoes into small chunks (no larger than 1cm cubes) and finely chop the green chilli and coriander.
  • Juice the lime and combine with the black pepper, cumin and chilli powder. 
  • Mix everything together in a bowl and serve.
