Kachumber Peanut Salad

1 x red onion
1 x medium cucumber
2 x large tomatoes
1 x green chilli (optional)
1/4 cup unsalted roasted peanuts
1 handful fresh coriander
1/2 x lime
1/4 tsp ground black pepper
1/4 tsp ground cumin
1/4 tsp chilli powder
Directions
- Dice the onion, cucumber and tomatoes into small chunks (no larger than 1cm cubes) and finely chop the green chilli and coriander.
- Juice the lime and combine with the black pepper, cumin and chilli powder.
- Mix everything together in a bowl and serve.
