
Roasted Cauliflower with Green Beans
Cutting down on fatty meat products is a great way to reduce saturated fat, so why not try swapping a meat dish for a vegetarian option; a great way to increase your vegetable intake and keep your heart healthy!

1 x small head cauliflower cut into florets
1 tbsp olive oil
1 tbsp red wine vinegar
1 tbsp tomato puree
2 tsp garam masala
1 tsp honey
1 tsp ready chopped garlic
1 x small onion cut into thick wedges
160 g green beans trimmed
Serve with brown rice (optional)
Directions
- Add cauliflower florets to a bowl with oil, vinegar, tomato puree, garam masala and honey, toss to coat
- Stir in garlic and onion
- Place the ingredients into the air fryer basket and air fry for about 8 mins, halfway through (about 4 mins) remove the basket and shake to ensure cauliflower evenly roasting.
- After 8 mins add the green beans to the basket and shake to combine.
- Continue air-frying until the vegetables are tender and roasted (about 5 minutes).
- Transfer to serving platter and serve with brown rice.
