3 reasons why it’s heart healthy

Roasted Curried Cauliflower

1 x large cauliflower
1 tbsp medium curry powder
1/2 tsp ground black pepper
2 tbsp olive oil
Directions
- Preheat the oven to 200°C and line a baking tray with grease proof paper or a reusable non-stick mat.
- Chop the cauliflower florets into bite-sized pieces and put it into a large mixing bowl.
- Add the curry powder and black pepper and toss to coat the florets.
- Add the olive oil and mix well, making sure every floret is coated with oil and spices – it’s easier to use your hands for this step.
- Distribute the cauliflower on the baking tray and cook for 25 minutes turning halfway through. Serve with your favourite curry!
