Creamy Gnocchi with Spring Vegetables

Gnocchi with fresh spring vegetables in a light creamy sauc

Ingredients

  • 3 tbsp half fat creme fraiche 

  • 1/2 lemon zested and juice  

  • 125 g long-stem broccoli 

  • 500 g gnocchi

  • 50 g spinach  

  • Salt and pepper to season 

Directions

  • Combine crème fraiche and lemon juice. Set aside.  
  • Cook the broccoli and spinach as instructed and in a separate saucepan boil the gnocchi until cooked..  
  • Heat oil in a saucepan. Add the gnocchi, broccoli and spinach, cook for 1-2 minutes. Add the crème fraiche mix then mix for another minute. 
  • Add salt and pepper to taste. Serve and garnish with lemon zest.
