
Creamy Gnocchi with Spring Vegetables

3 tbsp half fat creme fraiche
1/2 lemon zested and juice
125 g long-stem broccoli
500 g gnocchi
50 g spinach
Salt and pepper to season
Directions
- Combine crème fraiche and lemon juice. Set aside.
- Cook the broccoli and spinach as instructed and in a separate saucepan boil the gnocchi until cooked..
- Heat oil in a saucepan. Add the gnocchi, broccoli and spinach, cook for 1-2 minutes. Add the crème fraiche mix then mix for another minute.
- Add salt and pepper to taste. Serve and garnish with lemon zest.
