This wholesome turkey chilli is low in fat but packed with flavour and fibre. With lean turkey breast mince and kidney beans, it’s a filling meal that supports heart health. The addition of vibrant vegetables and aromatic spices creates a comforting dish that's perfect for any time of year.

Method

  1. Heat the oil in a large pan and gently fry the red onion until soft, then add the garlic and red pepper and saute for 5-7 minutes, stirring frequently.
  2. Add the minced turkey to the pan and cook it through. Once cooked, add the chilli powder, cumin, oregano, cayenne pepper and salt – stir well.
  3. Lastly, add the tomatoes and kidney beans. Bring to a boil, then reduce the heat and simmer for 30-45 minutes, or until the chilli has thickened to taste.
  4. Serve up piping hot with wholegrain rice. You could also add half an avocado and/or a dollop of low-fat sour cream for a topping.
