Roasted Cauliflower with Green Beans

This colourful vegetarian dish is bursting with flavour and goodness. Swapping meat for vegetables helps lower saturated fat intake, while boosting your fibre, vitamin, and mineral levels—perfect for a heart-healthy meal.


Method

  1. Add cauliflower florets to a bowl with oil, vinegar, tomato puree, garam masala and honey, toss to coat
  2. Stir in garlic and onion
  3. Place the ingredients into the air fryer basket and air fry for about 8 mins, halfway through (about 4 mins) remove the basket and shake to ensure cauliflower evenly roasting.
  4. After 8 mins add the green beans to the basket and shake to combine.
  5. Continue air-frying until the vegetables are tender and roasted (about 5 minutes).
  6. Transfer to serving platter and serve with brown rice.

    Ingredients

  • 1 x small head cauliflower cut into florets
  • 1 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tbsp tomato puree
  • 2 tsp garam masala
  • 1 tsp honey
  • 1 tsp ready chopped garlic
  • 1 x small onion cut into thick wedges
  • 160 g green beans trimmed
  • Serve with brown rice (optional)
