Start your day with this nourishing scrambled oats protein bowl, designed to support heart health without compromising on flavour. Made with oats, fruit, and protein-rich ingredients, it provides a balanced combination of fibre and 35g of protein to help keep you feeling full until lunch. Perfect for a satisfying breakfast, this dish is a simple way to fuel your body and care for your heart at the same time.


Method

  1. In a bowl, mash the banana until smooth. Add the oats, eggs and vanilla extract. Mix well until fully combined.
  2. Heat a frying pan over a medium heat and melt the butter. Pour in the mixture and cook gently, stirring continuously, as you would with scrambled eggs until the mixture thickens and forms a soft, fluffy scrambled texture that is lightly browned.
  3. Whisk the cashew butter with the water.
  4. Divide the Greek yoghurt evenly between two bowls, spoon in the warm scrambled oats, top with raspberries and blueberries and drizzle over the cashew nut butter mixture.

  • 1 large banana
  • 100g oats
  • 3 eggs
  • 1 tsp vanilla extract
  • ½ tsp butter
  • 300g fat-free Greek yoghurt
  • 50g frozen raspberries
  • 50g frozen blueberries
  • 1 tbsp cashew nut butter
  • 2 tbsp water
