Nut Roast
Recipe by Amie LeckieThis nut roast is a crowd pleaser, whether you are vegan or not. It works great as a main alongside your veggies and potatoes on your Sunday dinner or as a side, and a way to add some additional plants and fibre to your usual roast.

1 x onion
1 tsp olive oil
250 g chopped nuts (can use any)
2 tbsp ground almonds
100 g wholewheat breadcrumbs
2 tsp reduced salt marmite or other yeast extract
1 tbsp chopped fresh sage or 1 tsp dried
1 tsp smoked paprika
1 tsp black pepper
Directions
- Preheat the oven to 180°C.
- Heat a frying pan with the olive oil and fry the onion for about 5 minutes until golden.
- Dilute the marmite/yeast extract in 130ml of hot water.
- Mix all the ingredients together and push into a lined loaf tin and bake for about 30 minutes.
