Banana and Oat Bars

Quick and easy sugar-free oat bars, a perfect healthy snack for toddlers and children.
 
These bars are naturally sweetened with bananas, desiccated coconut and the dates and are soft enough for little mouths to manage.
 
They can also be frozen for convenience.

Ingredients

  • 150 g rolled oats

  • 1 tbsp desiccated coconut

  • 50g cup rapeseed oil

  • 1.5 bananas

  • 3 dates

  • 4 tbsp orange / apple juice

Directions

  • Preheat the oven to 170 degrees and line a baking dish with some parchment paper.
  • Put the oats in a food processor and mix for a few seconds to break them down a bit. Transfer the oats into a large bowl and mix in the desiccated coconut.
  • In a blender blitz the melted rapeseed oil, bananas, dates and fruit juice until it forms a sticky paste. Pour this on top of the oat mixture and stir until everything is well combined.
  • Scoop the mixture into the dish and press down with the back of the spoon to make it compact.
  • Bake in the oven for 20 – 25 minutes or until the edges of the mixture are beginning to brown.
  • Lift out of the dish with the parchment paper and leave to cool before removing the parchment and cutting into 8 to 10 pieces.
