
Cheese and Courgette Savoury Muffins

1 small courgette
100 g light cheddar cheese
225 g wholewheat self-raising flour
175 ml semi-skimmed milk
50 ml olive oil
1 egg
Directions
- Preheat your oven to 200 degrees and place the muffin cases in a muffin tin.
- Rinse the courgette and grate it into a mixing bowl.
- Grate the cheese and add to the mixing bowl, along with the flour, milk, olive oil and egg.
- Mix until all the ingredients are just combined – don’t overmix.
- Divide the mixture between your muffin cases and bake in the oven for 20 minutes, or until they are golden brown (the time needed may vary depending on the size of your muffin cases).
